“The Love of Port” Wine Event Series Holds at IFT

“The Love of Port” event series organised by Institute for Tourism Studies (IFT), The Vintage Wine Academy together with Wine Society of Macau, Macau Culinary Association and Macau Sommelier Association, among others was held at the IFT Educational Restaurant on 24 October 2014.


Focusing on port wine, this event series comprises The 7th Young Chef Competition Port Challenge, Vintage Port Academy Decanting Competition, Vintage Port Tasting and Charity Port Dinner. The event kicked off with The 7th Young Chef Competition which was organised by Macau Culinary Association and attracted 16 promising junior chefs from the Culinary Association (MCA) to participate and vie for the Young Chef of the Year Port Challenge championship at IFT. After tasting and discussion by the judging panel, the winner was Joanne C. Sese from Banyan Tree Macau, the 1st runner-up was Tham Yong Seng from Galaxy Macau and the 2nd runner-up Yorick Soh Chin Chiang from Mandarin Oriental. Presidents of Macau Culinary Association Raimund Pichlmaier presented trophies and souvenirs to all the winners and participants.


The first ever Vintage Port Academy Decanting Competition with The Macau Sommelier Association was then held at 1530 on that day, attracting 16 contestants from 8 hotels to participate. Contestants decanted a bottle of Vintage Port with proper techniques and judges decided the winners based on speed, presentation, wastage and brightness. After evaluation by the judges, the winner went to Nuno Miguel Gomes and Erlito Sogelio Penido from Hard Rock Hotel, while the 1st runner-up team was Ceasar Dou and Kenny Chio from Sands Macao and the 2nd runner-up team Marcos de Jesus Morais Alves and Hedi Lao from Four Seasons Hotel.


After that, an amazing Vintage Port Tasting with Dow’s, Fonseca, Graham’s, Quevedo, Quinta Vale D. Maria,  Taylor’s, Quinta do Passadouro, Quinta da Romaneira and Quinta Vale Meao took place at 1700 to offer participants a pleasant experience to learn and try various kinds of port wine from around the world.


The last but the most tempting one of the series – The Love of Douro Charity Port Dinner organised by Macau Wine Society with Nicolas Heath, Fladgate Partnership (Taylor, Fonseca, Croft), Euan Mackay, Symington Family Estates (Graham, Dow, Warre) and Jorge Nunes, Winemaker Symington Family Estates was held at IFT Educational Restaurant. A 3-course menu plus a selection of blue cheeses pairing with different tables and port wines namely Pombal de Vesuvio 2009, Chryseia 2011, Graham’s 30 Year Old and Taylor’s Vintage 1985 were served during the dinner. All profits will be donated to Action Oasis which helps poor children to acquire education.


IFT always endeavours to support local young calibers and industry professionals by offering training programmes and organising events to enhance their knowledge and skills. Also, the Institute has always been dedicated to bring in new gastronomic elements to Macao and organise different culinary activities for local industry and the public to join. Through this kind of event, it is believed that the catering skills and horizon of local citizens and industry professionals will be enhanced.
